Our Restaurant Grease Trap Services
Effective Grease Management Solutions
At Aqua Mundus, we understand the particular challenges restaurants face when managing FOG. Busy service periods and constant washing up can place considerable pressure on kitchen drainage, while restricted kitchen or plant space can make choosing the right equipment more difficult. A blocked drain or other grease trap problems can also cause significant disruption when your restaurant needs to remain operational.
Our considerable experience and expertise mean we can assess your kitchen and create a grease management system suited to the way your restaurant operates. We can help with system selection and sizing, installation and ongoing maintenance and cleaning, reducing the risk of drainage problems and helping your restaurant manage its wastewater effectively.
Quality Grease Traps for Restaurants
Restaurant grease traps need to be selected around the demands of the kitchen they serve. The size of your establishment and number of daily covers are important, but wastewater flow, kitchen equipment, FOG output and the available space for installation also need to be considered. Choosing the Right Grease Trap for Your Restaurant
There is no single grease trap that will suit every restaurant. Selecting the right system means looking at how the kitchen operates and the amount of wastewater and FOG produced.
Daily covers and food output are important considerations, but so are operating hours, wash-up demand, connected sinks and appliances, existing drainage and any plans to increase kitchen capacity in the future. Taking all of these factors into account helps ensure the system can cope during the periods when your kitchen is at its busiest.
Consider Kitchen Layout, Function and Output
The way your restaurant uses its kitchen will influence both the size and type of system required. A fine dining restaurant, fast-food outlet and dark kitchen may produce very different wastewater volumes and FOG loads even if they occupy premises of a similar size.
Available space also matters for determining which size grease trap you need. Existing pipework, sink positions, dishwashing areas and access for future cleaning and maintenance all need to be considered before a restaurant grease trap is specified.
Automatic vs Manual
- Manual grease traps retain FOG within the unit so that it can be removed during cleaning.
- Automatic grease removal units separate collected grease and transfer it into a container, changing how day-to-day grease management is handled.
Both can be suitable for restaurants. The right choice depends on factors such as FOG output, kitchen activity, available space and the level of ongoing maintenance required, rather than one system universally being better than the other.
At-Source/Above-Ground vs Centralised/Below-Ground
An above-ground grease trap can be positioned close to the source of the wastewater, such as a sink or wash-up area. This can be particularly useful where internal space and existing drainage allow for a localised solution.
Larger restaurants or kitchens with several wastewater sources may instead require a centralised system, including a below-ground grease interceptor positioned outside the kitchen. Capacity, drainage routes, access and available space will help determine which arrangement is most appropriate.
Utilise Our FREE Size Calculator and Site Survey
If you have the necessary kitchen measurements, our FREE grease trap size calculator can help you identify suitable options.
For more detailed support, book a FREE on-site survey. One of our engineers will assess your kitchen, drainage and operational requirements before recommending an appropriate solution.
Restaurant Grease Trap Regulations and FOG Compliance
Restaurants need to prevent FOG from causing problems within their drainage systems and the wider sewer network. When FOG is allowed to enter drains, it can cool and accumulate within pipework, contributing to blockages and potentially interfering with the operation of the sewer system.
For restaurants in England and Wales, Section 111 of the Water Industry Act 1991 restricts discharges that could interfere with the free flow of a public sewer or its treatment processes. In England, Approved Document H of the Building Regulations also states that drainage serving commercial hot food premises should incorporate a grease separator designed to the relevant BS EN 1825 standards, or another effective means of grease removal.
This does not mean that one particular grease trap is appropriate for every restaurant. The correct grease management provision depends on the premises, drainage arrangement and applicable requirements. You can find further information in our Do All Restaurants Need a Grease Trap? guide.

Restaurant Grease Trap Installation: What to Expect
Our restaurant grease trap installation process is designed to make each stage clear, from the initial survey through to ongoing maintenance and support.
Step 1: FREE Site Survey
We start by assessing your restaurant, including the kitchen layout, existing drainage, available space and the amount of wastewater and FOG your operation is likely to produce.
Step 2: Sizing and System Selection
Using the information gathered during the survey, we can size the system correctly and recommend a grease management solution suited to your restaurant and its operational demands.
Step 3: Installation and Commissioning
Once the specification has been agreed, our experienced engineers will complete the grease trap installation and commission the system. Work can be scheduled around your restaurant to help minimise disruption.
Step 4: Cleaning and Planned Maintenance
After installation, we can continue supporting your system with regular grease trap cleaning and planned grease trap servicing and maintenance, helping prevent excessive FOG build-up and identify emerging issues.
Step 5: Repairs and Ongoing Support
If your system develops a fault or breaks down, our grease trap repair service is available to investigate the problem and carry out the necessary repairs where possible.

Keeping Your Restaurant Grease Trap Working
Commercial restaurant grease traps need ongoing attention to continue working effectively. As FOG and food waste accumulate, regular restaurant grease trap cleaning helps prevent excessive build-up, unpleasant smells, blockages and overflows that could disrupt service.
Our pre-planned maintenance (PPM) services can include scheduled inspections, cleaning and restaurant grease trap maintenance, with the frequency tailored around the type of system and demands placed on it. Regular servicing also gives our engineers an opportunity to identify developing faults before they turn into more disruptive repairs.
If something does go wrong, Aqua Mundus provides restaurant grease trap repair services to investigate faults and get the system working correctly again wherever possible. We can also remove collected grease trap waste as part of our maintenance services and provide the relevant waste transfer notes to support your business waste records.
In other words, we go a whole lot further than restaurant grease trap installation. Aqua Mundus can support your grease management system from its initial specification and installation through to cleaning, servicing and repair.

Frequently Asked Questions
Here are some of the common queries we receive from our clients about grease traps and their operation, with answers from the Aqua Mundus team of expert engineers.
-
What size grease trap does a restaurant need?
The right grease trap size for a restaurant depends on factors including wastewater flow, kitchen equipment, sink dimensions, daily output and the amount of FOG produced. Restaurant size or daily covers alone cannot determine the correct capacity.
You can use our grease trap sizing calculator for an initial recommendation or book a FREE site survey for advice based on your kitchen.
-
Is my restaurant legally required to have a grease trap system?
Restaurants must have appropriate measures in place to prevent FOG from causing problems within drainage and sewer systems, but the exact requirements depend on the premises and where in the UK the restaurant is located.
In England, Approved Document H refers to a grease separator complying with the relevant BS EN 1825 standards or another effective means of grease removal for drainage serving commercial hot food premises.
-
Are grease traps easy to keep clean?
Maintenance requirements vary depending on the system. Manual grease traps require accumulated FOG and waste to be removed, while automatic systems manage separated grease differently but still require regular cleaning and inspection.
Aqua Mundus can provide scheduled cleaning and servicing if you would rather leave the ongoing maintenance to our engineers.
-
Can you install restaurant grease traps outside of working hours?
Yes. Our experienced engineers can carry out restaurant grease trap installation outside regular working hours where required, helping minimise disruption to your kitchen and customers.
-
Who do I contact if it needs repairing?
For repairs, contact Aqua Mundus directly on our 24-hour grease management service line. We offer emergency call-out services and regular maintenance to keep your grease traps in optimal condition – though we always remind our valued clients that prevention is better than cure.
-
Do small restaurants need a grease trap?
A smaller restaurant can still produce significant quantities of fats, oils and grease. The appropriate grease management provision depends on factors such as the food prepared, kitchen equipment, wastewater output and drainage arrangement rather than the physical size of the restaurant alone.
-
Can restaurants operate without a grease trap?
Restaurants need an effective way of preventing FOG from causing problems within their drainage and the sewer system. That does not necessarily mean every restaurant requires exactly the same type of grease trap.
The appropriate solution depends on the kitchen and relevant requirements. A site survey can help establish what grease management provision is suitable for an existing or planned restaurant.
-
How often should a restaurant grease trap be cleaned?
There is no single cleaning interval suitable for every restaurant. The required frequency depends on the type and capacity of the system, the amount of FOG produced and how heavily the kitchen is used.
Regular inspections can help establish an appropriate schedule. Aqua Mundus also provides professional grease trap cleaning and grease trap servicing and maintenance for restaurants that want their ongoing grease management handled for them.
-
What type of grease trap is best for a restaurant?
The best system is one that suits the restaurant’s wastewater output, FOG load, kitchen layout, available space and maintenance requirements. Depending on the premises, this could include an automatic or manual system positioned at source/under sink, or a larger below-ground grease interceptor.
Our engineers can assess these factors during a FREE site survey before recommending an appropriate option.
-
Can a grease trap be installed in an existing restaurant?
Yes, restaurant grease traps can often be retrofitted into existing premises. The available options will depend on the kitchen layout, existing drainage, available internal or external space and access for installation and future maintenance.
A site survey allows us to assess these practical constraints before recommending how and where the system could be installed.
-
Where should a restaurant grease trap be installed?
Some grease traps are positioned above ground (at-source), close to sinks or other equipment producing greasy wastewater. Larger underground grease traps may instead serve several fixtures and can be installed outside or below ground.
The most suitable location depends on your drainage arrangement, available space, wastewater output and access requirements for cleaning and servicing.
