  • Received a Letter From a Water Company

Water companies require foodservice establishments connected to their sewer lines to be compliant with wastewater legislation. If you’ve received a letter citing The Water Industry Act 1991 Section 1.1.1, it could be because your existing grease trap is not compliant. This is a formal notice and you’ll need to react quickly. Under the Water Industry Act 1991, you can be fined and even prosecuted for a failure to comply with legislation, so get in touch with us today and we’ll be able to install a solution that will meet the requirements.

Grease Management FAQs

Got a question? We may have the answer right here…

  • What should I do if my grease trap is overflowing or not draining properly?

If your grease trap is overflowing or draining slowly, it’s usually a sign that it’s full and needs immediate cleaning. A blockage in the pipes could also be the cause. Contact Aqua Mundus right away to arrange an urgent service visit. Our engineers will inspect the trap, clear any blockages and get it functioning properly again in no time.

  • My grease trap is filling up faster than usual, what are the signs it needs maintenance?

If your grease trap is filling up quicker than normal, it could mean there’s an issue with the trap’s capacity or that it needs more frequent cleaning. If your service hours have increased or the nature of the food you serve has changed, you may need to upgrade to a bigger trap. Watch for signs like slow drainage, foul odours or grease appearing in sinks. We can assess your setup and recommend the right maintenance plan or upgrades to ensure the best performance for your business.

  • What is the legislation for fats, oils and grease management?

For existing premises, the reasons for fitting a FOG management system tend to be as a result of drain problems, pressure from your water company or landlord or an environmental health officer. It is however a requirement under the Water Industry Act 1991 to ensure that your premises does not discharge any product into the drain which may interfere with its operation, regardless of how long it has been operating.

Taken from the Water Industry Act 1991:

    “Provisions protecting sewerage system

111 Restrictions on use of public sewers

    (1) Subject to the provisions of Chapter III of this Part, no person shall throw, empty or turn, or suffer or permit to be thrown or emptied or to pass, into any public sewer, or into any drain or sewer communicating with a public sewer-

    (a) any matter likely to injure the sewer or drain, to interfere with the free flow of its contents or to affect prejudicially the treatment and disposal of its contents.”

Thames Water reported that in 2007/2008 over 60,500 sewer blockages reported were caused in part by FOG.

  • Why Is the issue of SSOs (Sanity Sewer Overflows) important?

Overflowing sewers release bacteria, viruses and other pathogens that may be hazardous to human health. The sewage may be released into your business or home, or into our waterways, streets and parks. SSOs are unpleasant and expensive to clean up, and if they occur on your property, it is you, the property owner, who may be responsible for the clean-up.

Having an SSO occur in your establishment may also lower the number of customers.

If the county is responsible for a clean-up, manpower and money are wasted on something that could have been avoided. The costs associated with SSOs can include containment, removal and disposal of contaminated materials, emergency line cleaning, disinfectants, sampling and testing, record keeping and documentation, public notification and EPA & MCWS enforcement actions. The non-direct costs may include media related expenses, property damages, public relations, insurance, worker and public exposure to untreated wastewater (pathogens and viruses) and decreased tourism. These costs will, most likely, trickle down into customers’ sewer bills.

  • What is the difference between yellow grease and brown grease?

Brown grease consists of floatable fats, oils, greases and settled solids that are intercepted and recovered by grease management systems. Brown grease is contaminated with food solids and is therefore difficult to reuse. Brown grease is usually disposed at a wastewater treatment facility but may become part of renewable energy sources in the future.

Yellow grease means fats, oils and greases that have not been in contact or contaminated with other sources (water, wastewater, solid waste, etc). An example of yellow grease is fryer oil, which can be recycled into products such as animal feed, cosmetics and alternative fuel. Yellow grease is also referred to as renderable FOG.

  • What do I do with the oil used in deep fryers?

If you are using deep fryers in your establishment, contact a rendering company to provide a bin or barrel for regular collection. There is also value in the re-use of oil.

  • Are grease traps required by law?

Grease traps are now a legal requirement for any business that deals with hot food. The laws were enforced by Parliament, which meant all commercial kitchens now have a duty of care and legal obligation to manage and remove FOG. For more in-depth information check out our ‘Are Grease Traps Required by Law’ blog.

  • Do I need a grease trap in my café?

Yes. Any commercial property that serves hot food is required to own a grease trap. This law was enforced by the House of Commons in the British Building Regulation Act, Document H, Section 2.21.

  • What causes bad odours in my grease trap? Can I fix it?

Bad odours often mean that grease and food waste have built up and the trap needs cleaning. A properly maintained grease trap should never smell. We offer a range of maintenance plans, including cleaning and servicing, to keep your trap and kitchen free from unpleasant odours.

  • How can grease build-up lead to slow drainage or blocked pipes?

Grease build-up can restrict the flow of wastewater through your pipes, leading to slow drainage and eventually blockages. When FOG (fats, oils and grease) solidifies, it clings to the pipe walls, gradually reducing the diameter and causing backups. Regular maintenance is essential to prevent this from happening – we offer pre-planned scheduled servicing to keep your pipes clear.

  • What should I do if my kitchen sink is backing up with grease?

A grease-filled kitchen sink normally indicates a clogged grease trap or pipes. The best course of action is to stop using the sink and contact us immediately. We can send one of our expert engineers to diagnose the issue, clean the trap and ensure your sink and grease trap are functioning properly.

  • I've realised I may not be legally compliant – what do I do?

If you suspect that your grease management system isn’t up to legal standards, don’t delay contacting us any longer. Non-compliance can lead to hefty fines and even prosecution under the Water Industry Act 1991. Get in touch with our experienced engineering team and we’ll arrange a site survey to assess your current setup and provide a solution that ensures full compliance.

The Environment Agency estimate 75% of sewer blockages are caused by a build-up of FOG.

Water Industry Act 1991

It is a criminal offence under section 111 of the Water Industry Act 1991 to discharge into the public sewers any matter which may interfere with the free flow of wastewater. In addition, where the water company has incurred costs in dealing with the detrimental effects on the sewers e.g. removing blockages, cleaning sewers, investigating and remedying flooding or pollution incidents, it can take legal action to recover these costs. Prosecution can result in substantial fines or even imprisonment.
